  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon smoked paprika (optional)
  • 0.5 teaspoon garlic powder
  • 0.25 cup crumbled feta cheese
  • 2 tablespoons honey plus extra for drizzling
  • 1 teaspoon fresh thyme leaves or rosemary

Method
 

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Peel and slice sweet potatoes into even ½-inch rounds.
  3. Toss rounds with olive oil, salt, pepper, garlic powder, and smoked paprika until evenly coated.
  4. Arrange in a single layer on the baking sheet and roast for 25–30 minutes, flipping halfway through.
  5. Transfer to a serving platter, drizzle with honey, sprinkle with feta and thyme, and serve warm.
