Ingredients
  

Sweet Potato Base
  • 2 large sweet potatoes sliced into rounds
  • 2 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
Toppings
  • 2 tbsp honey
  • 1/3 cup feta cheese crumbled
  • 1 tsp fresh thyme leaves

Method
 

  1. Slice sweet potatoes and toss with olive oil, salt, and pepper.
  2. Roast at 425°F, flipping halfway, until golden and tender.
  3. Drizzle with honey and top with feta and herbs before serving.
