Ingredients
  

Roasted Vegetables
  • 1 zucchini, sliced
  • 1 yellow squash, sliced
  • 1 red bell pepper, chopped
  • 1 cup cherry tomatoes
  • 1/2 red onion, sliced
  • 3 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp Italian seasoning
  • 2 cloves garlic, minced
Orzo Base
  • 1.5 cups orzo
  • 3 cups water or broth
  • 1/2 tsp salt
Finishing Touches
  • 2 tbsp lemon juice
  • 1/3 cup Parmesan, grated

Equipment

Method
 

  1. Roast vegetables until caramelized and tender.
  2. Cook orzo in water or broth until tender.
  3. Toss cooked orzo with roasted vegetables.
  4. Add lemon juice and Parmesan.
  5. Garnish with basil and serve warm or chilled.

Notes

Add pesto or feta for extra flavor.
