Ingredients
  

Salmon Poke
  • 1 lb sushi-grade salmon, cubed
  • 3 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp rice vinegar
  • 1 tsp honey
  • 1 clove garlic, grated
  • 0.5 tsp ginger, grated
Bowl Toppings
  • 2 cups cooked sushi rice
  • 1 cup diced cucumber
  • 1 cup shelled edamame
  • 1 avocado, cubed
  • 1 diced mango
  • 0.5 cup shredded carrots
  • 2 tbsp green onions, sliced
  • 1 sheet nori or seaweed snack, sliced

Equipment

  • Mixing bowls
  • Baking sheet
  • Wire rack
  • Hand mixer or stand mixer

Method
 

  1. Whisk together soy sauce, sesame oil, rice vinegar, honey, garlic, and ginger to form marinade.
  2. Cube salmon and toss in marinade. Chill 10–15 minutes.
  3. Prepare vegetables and toppings.
  4. Add warm sushi rice to bowls and arrange toppings.
  5. Top with salmon and drizzle with extra marinade.
  6. Garnish with sesame seeds and lime wedges.

Notes

Always use sushi-grade salmon. Add spicy mayo for a creamy twist.
