  • 1 lb Italian sausage mild or spicy
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 2 cups uncooked short pasta penne, rotini, farfalle
  • 14.5 oz diced tomatoes
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 cup shredded mozzarella or Italian blend
  • 1 tsp Italian seasoning
  • 0.5 tsp paprika
  • Salt and black pepper to taste
  • 1 cup spinach or basil optional

  • Wooden spoon

Method
 

  1. Brown the sausage in olive oil over medium heat.
  2. Add diced onion and cook until softened.
  3. Stir in garlic and cook 30 seconds.
  4. Add seasoning, tomatoes, and chicken broth.
  5. Add pasta and simmer covered 10–12 minutes.
  6. Stir in cream and cheese.
  7. Add spinach or basil if using.
  8. Serve warm with parmesan.

Notes

Adjust consistency with extra broth if needed.
