Method
- Heat olive oil in a large pot and brown the sausage. Remove and set aside.
- Sauté onion and carrots until softened, then add garlic.
- Add potatoes and chicken broth, simmer until potatoes are tender.
- Return sausage to the pot, season with paprika, red pepper flakes, salt, and pepper.
- Stir in cream and heat gently. Garnish with parsley and serve warm.
