Ingredients
  

Seafood Filling
  • 1 lb shrimp peeled and deveined
  • 8 oz lump crab meat
  • 1 tbsp olive oil
  • 1/2 cup onion diced
  • 2 cloves garlic minced
  • 4 oz green chiles diced
Creamy Sauce
  • 3 tbsp butter
  • 3 tbsp all-purpose flour
  • 1 1/2 cups chicken or seafood broth
  • 1 cup sour cream
  • 1/2 cup heavy cream
Assembly
  • 8 pieces flour tortillas
  • 2 cups shredded Monterey Jack cheese

Equipment

Method
 

  1. Sauté onion and garlic, add shrimp and cook briefly.
  2. Fold in crab meat, chiles, and seasonings.
  3. Prepare creamy sauce by making a roux and adding broth and dairy.
  4. Fill tortillas with seafood and cheese, roll and place in dish.
  5. Top with sauce and cheese, bake until bubbly.

Notes

Do not overcook shrimp before baking.
