  • 700 g chicken thighs boneless, skinless
  • 3 medium sweet potatoes cubed
  • 3 tbsp olive oil
  • 3 cloves garlic minced
  • 1 tsp dried oregano
  • 1 tsp smoked paprika
  • 0.5 tsp ground cumin
Tzatziki Sauce
  • 1 cup Greek yogurt
  • 0.5 cup grated cucumber
  • 1 tbsp lemon juice
  • 1 tbsp fresh dill chopped

Method
 

  1. Toss sweet potatoes with oil, garlic, and spices; roast until tender.
  2. Season chicken with lemon, garlic, and oregano; add to pan.
