Ingredients
  

Risotto
  • 1.5 cups Arborio rice
  • 5 cups broth warm
  • 2 tbsp olive oil
  • 3 tbsp unsalted butter
  • 1 small shallot diced
  • 2 cloves garlic minced
  • 0.5 cup dry white wine
  • 0.75 cup Parmesan cheese grated
Shrimp
  • 1 lb large shrimp peeled and deveined
  • 1 tbsp olive oil

Method
 

  1. Warm broth and keep hot.
  2. Season and sear shrimp; set aside.
  3. Cook aromatics and toast rice.
  4. Add wine and gradually stir in broth.
  5. Finish with cheese, shrimp, and lemon zest.
