Ingredients
  

Soup Base
  • 1 lb Italian sausage
  • 1 yellow onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 14.5 oz diced tomatoes
  • 1 tsp Italian seasoning
  • 1/2 tsp crushed red pepper flakes optional
  • salt and pepper to taste
Finishing Ingredients
  • 20 oz refrigerated cheese tortellini
  • 3 cups fresh spinach
  • 1 cup heavy cream

Method
 

  1. Brown sausage in a skillet, breaking into crumbles; drain grease.
  2. Add sausage, onion, garlic, broth, tomatoes, Italian seasoning, and red pepper flakes to the slow cooker.
  3. Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours.
  4. Add tortellini 30 minutes before serving and cook until tender.
  5. Stir in heavy cream and spinach; cook until spinach wilts.
  6. Taste and adjust seasonings before serving.

Notes

Add pesto or parmesan for extra flavor before serving.
