  • 4 boneless, skinless chicken breasts
  • 2 cups canned crushed tomatoes
  • 1 cup heavy cream
  • 4 cloves garlic minced
  • 1 cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • salt and pepper to taste
  • 0.5 cup fresh basil leaves plus extra for garnish
  • 2 tbsp olive oil

Method
 

  1. Season chicken with salt and pepper. Sear in olive oil for 2-3 minutes per side if desired.
  2. Place chicken, crushed tomatoes, garlic, Italian seasoning, and Parmesan in slow cooker.
  3. Cover and cook on low for 4-5 hours or high for 2-3 hours.
  4. Stir in heavy cream and basil 20 minutes before serving.
  5. Serve over pasta, rice, or with bread, garnished with extra basil and Parmesan.

Notes

Great with pasta or bread. Adjust cream for desired sauce thickness.
