Ingredients
  

Chicken
  • 1.5 lbs chicken thighs boneless, skinless
Sauce
  • 0.25 cup honey
  • 0.25 cup soy sauce
  • 3 cloves garlic minced
  • 1 tsp ginger grated
  • 2 tbsp ketchup
  • 1 tbsp rice vinegar or apple cider vinegar
  • 0.5 tsp crushed red pepper flakes optional
Garnish
  • 2 tbsp green onions chopped
  • sesame seeds optional

Method
 

  1. Place chicken in slow cooker.
  2. In a bowl, whisk together honey, soy sauce, garlic, ginger, ketchup, rice vinegar, and red pepper flakes.
  3. Pour sauce over chicken, coating evenly.
  4. Cook on low for 4–5 hours or on high for 2–3 hours, until chicken is tender.
  5. Optional: Thicken sauce by mixing 1 tsp cornstarch with 1 tbsp water and stir into sauce. Cook an additional 5–10 minutes on high.
  6. Garnish with green onions and sesame seeds. Serve with rice or noodles.

Notes

Great for meal prep. Store in fridge up to 3 days and reheat gently.
