Method
- Season pork chops with salt, pepper, paprika, thyme, and rosemary.
- Heat olive oil and butter in a skillet. Sear pork chops 2–3 minutes per side.
- Place sweet potatoes and onion wedges at the bottom of slow cooker.
- Place seared pork chops on top of vegetables.
- Add garlic and pour chicken broth over everything.
- Cover and cook on Low for 6–7 hours or High for 3–4 hours until tender.
- Garnish with parsley and serve.
Notes
Optional: Make gravy by whisking cornstarch into cooking liquid after removing meat and veggies.
