  • 1 lb ground beef 80/20 preferred
  • 4 large flour tortillas
  • 1.5 cups shredded cheddar cheese or mix with American cheese
  • 1 small onion finely diced
  • 0.5 cup diced pickles
  • 1 tbsp butter for toasting
Burger Sauce
  • 2 tbsp mayonnaise
  • 1 tbsp ketchup
  • 1 tsp yellow mustard
  • 0.5 tsp garlic powder
  • 0.5 tsp smoked paprika

Equipment

  • Mixing bowls
  • Large skillet or griddle
  • Spatula
  • Knife and cutting board

Method
 

  1. Whisk together mayonnaise, ketchup, mustard, garlic powder, and smoked paprika to make burger sauce.
  2. Cook ground beef in a skillet until browned, then add onions and cook 2 more minutes.
  3. Stir in a spoonful of burger sauce to the beef and remove from heat.
  4. Lay out tortillas and fill half with cheese, beef mixture, pickles, and more cheese. Fold in half.
  5. Cook quesadillas in buttered skillet until golden and crispy on both sides, 2–3 minutes each.
  6. Slice and serve with extra sauce and toppings.

Notes

Serve hot for the crispiest edges and meltiest cheese.
