  • 1 can chickpeas 15-ounce, drained and rinsed
  • 1 avocado large and ripe
  • 0.25 cup dill pickles finely chopped
  • 2 tbsp red onion finely chopped
  • 1 tbsp lemon juice fresh
  • 1-2 tbsp fresh dill chopped
  • 4 slices whole-grain bread

Method
 

  1. Mash chickpeas in a bowl until slightly chunky.
  2. Add avocado and mash together.
  3. Stir in pickles, onion, lemon juice, and dill.
  4. Season with salt and pepper.
  5. Spread onto bread slices and assemble sandwiches.

Notes

Add pickle juice for extra tang. Store filling up to 2 days in refrigerator.
