  • 12 oz smoked sausage sliced
  • 2 medium sweet potatoes diced small
  • 1 tbsp olive oil
  • 1 small onion diced
  • 1 red bell pepper sliced
  • 2 cloves garlic minced
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 0.5 tsp onion powder
  • 0.5 tsp dried thyme or Italian seasoning
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 2 tbsp water or broth optional for steaming
  • 2 tbsp fresh parsley or green onions for garnish

Equipment

  • Large skillet

Method
 

  1. Brown smoked sausage in skillet.
  2. Cook sweet potatoes in olive oil.
  3. Add onion and bell pepper; sauté until softened.
  4. Add garlic and seasonings.
  5. Steam sweet potatoes with water if needed.
  6. Return sausage, mix, and cook until heated through.

Notes

Cut sweet potatoes small for faster cooking.
