- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Toss sweet potatoes, chickpeas, and red onion with olive oil and spices until evenly coated.
- Spread mixture evenly on the baking sheet and roast for 30–35 minutes, stirring halfway.
- Remove from oven, sprinkle with fresh parsley, and serve with lemon wedges.
