  • 1 can chickpeas drained and rinsed
  • 1 medium red onion sliced into wedges
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon garlic powder
  • 0.5 teaspoon chili flakes optional
  • salt and pepper to taste
  • 2 tablespoons fresh parsley chopped
  • lemon wedges for serving

Method
 

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Toss sweet potatoes, chickpeas, and red onion with olive oil and spices until evenly coated.
  3. Spread mixture evenly on the baking sheet and roast for 30–35 minutes, stirring halfway.
  4. Remove from oven, sprinkle with fresh parsley, and serve with lemon wedges.
