Smothered Okra with Shrimp

Ingredients
  

Main
  • 1 lb okra, sliced fresh or frozen
  • 1 lb shrimp, peeled and deveined
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 1 onion, diced
  • 1 green bell pepper, diced
  • 2 celery stalks, diced
  • 4 cloves garlic, minced
  • 2 tomatoes, diced or 1 can diced tomatoes
  • 1 cup chicken broth
  • 1 tbsp tomato paste
  • 1 tsp Cajun seasoning
  • 1 tsp smoked paprika
  • 0.5 tsp thyme
  • salt and pepper to taste
  • 1 tbsp lemon juice

Equipment

  • Large pot
  • Wooden spoon
  • Knife and cutting board

Method
 

  1. Sauté onion, bell pepper, and celery in butter and oil.
  2. Add okra and cook until slightly softened.
  3. Add tomatoes, tomato paste, and seasonings.
  4. Pour in broth and simmer 25–30 minutes.
  5. Add shrimp and cook 5–7 minutes until pink.
  6. Stir in lemon juice and adjust seasoning.
  7. Serve over rice and garnish with herbs.

Notes

Sautéing okra helps reduce sliminess. Great served over white rice.
