Ingredients
  

Cookie Dough
  • 2 cups almond flour finely blanched
  • 4 oz cream cheese softened
  • 4 tbsp unsalted butter softened
  • 3/4 cup powdered erythritol
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1/4 tsp salt

  • Hand mixer or stand mixer

Method
 

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Beat cream cheese and butter until smooth and fluffy.
  3. Add powdered sweetener and mix until light.
  4. Beat in egg and vanilla until fully combined.
  5. Mix almond flour, baking powder, and salt in a separate bowl.
  6. Add dry ingredients to wet mixture and mix just until combined.
  7. Scoop dough onto baking sheet and gently flatten.
  8. Bake 10–12 minutes until edges are set.
  9. Cool slightly before transferring to a wire rack.

Notes

Use powdered sweetener for best texture. Do not overbake.
