Ingredients
  

Cookie Batter
  • 2 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup buttermilk
Filling
  • 1 cup marshmallow creme
  • 1/2 cup unsalted butter, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract

Equipment

Method
 

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, cocoa, baking powder, baking soda, and salt.
  3. In a large bowl, cream butter and sugar until light and fluffy. Beat in egg and vanilla.
  4. Alternate adding dry ingredients and buttermilk to the butter mixture, beginning and ending with dry ingredients. Mix until combined.
  5. Scoop batter onto prepared sheets, spacing 2 inches apart. Bake 10–12 minutes until set.
  6. Cool completely on wire racks before filling.
  7. For the filling: beat butter until creamy, then add powdered sugar, marshmallow creme, and vanilla. Beat until fluffy.
  8. Spread filling on flat side of one cookie, top with another cookie to form a sandwich.
