Ingredients
  

Focaccia Dough
  • 1 cup sourdough discard unfed starter
  • 1 cup warm water
  • 2 1/4 tsp active dry yeast
  • 1 tbsp sugar
  • 3 cups all-purpose flour
  • 1/4 cup olive oil plus more for pan and topping
  • 1 1/2 tsp salt
  • 1 tbsp fresh rosemary chopped

Method
 

  1. Activate yeast in warm water with sugar.
  2. Mix in sourdough discard, olive oil, salt, and flour.
  3. Let dough rise until doubled.
  4. Transfer to oiled pan, dimple, and top with oil and herbs.
  5. Bake until golden and crisp.

Notes

Best enjoyed warm with olive oil or as sandwich bread.
