Ingredients
  

Peach Filling
  • 3 cups peaches peeled and diced
  • 0.5 cup brown sugar
  • 1 tsp cinnamon
  • 0.25 tsp nutmeg
  • 1 tbsp lemon juice
  • 1 tbsp cornstarch
  • 1 tsp vanilla extract
  • 2 tbsp unsalted butter
Assembly
  • 10-12 egg roll wrappers
Frying & Serving
  • vegetable oil for frying

Equipment

  • Saucepan
  • Deep skillet or pot
  • Tongs
  • Paper towels

Method
 

  1. Cook peaches with sugar, spices, lemon juice, cornstarch, vanilla, and butter until thickened.
  2. Cool filling slightly before assembling egg rolls.
  3. Fill and tightly roll egg roll wrappers, sealing edges with water.
  4. Heat oil to 350°F (175°C).
  5. Fry egg rolls until golden and crispy, turning as needed.
  6. Drain on paper towels and serve warm with toppings.

Notes

Serve immediately for best crisp texture.
