- Preheat oven to 350Β°F and place pie crust in a 9-inch deep-dish pan. Brush bottom and sides with egg white. Add parchment and pie weights, par-bake 15 minutes. Remove weights and bake 8-10 more minutes until lightly golden.
- Slice tomatoes and sprinkle with 1 tsp salt. Let sit 15-20 minutes to draw out excess moisture. Pat dry with paper towels.
- Mix Greek yogurt, light mayo, cheddar, mozzarella, parmesan, black pepper, and garlic powder in a bowl for the cheese mixture.
- Layer half the tomatoes in the par-baked crust. Sprinkle with basil, green onions, garlic, black pepper, and oregano. Spread half the cheese mixture over tomatoes. Repeat with remaining tomatoes and cheese mixture.
- Bake at 350Β°F for 30-35 minutes until top is golden and bubbly. Cool at least 10-15 minutes before slicing.
- Serve warm, room temperature, or cold. Garnish with extra fresh basil if desired πΏπ .
