Ingredients
  

Main Bowl
  • 2 large chicken breasts
  • 1 tbsp olive oil
  • 1 packet southwest or taco seasoning
  • 2 cups cooked rice brown or white
  • 1 cup black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 small red bell pepper, chopped
  • 1 medium avocado, sliced
  • 1 cup diced cherry tomatoes
  • 0.25 cup red onion, finely chopped
  • 0.25 cup fresh cilantro, chopped
  • 1 lime, cut into wedges
Chipotle-Lime Dressing
  • 0.5 cup Greek yogurt or sour cream
  • 1 tbsp mayonnaise
  • 1 tsp chipotle chili powder
  • 1 tbsp lime juice
  • 0.5 tsp garlic powder
  • salt and pepper to taste

Method
 

  1. Season chicken with olive oil and southwest seasoning.
  2. Grill or pan-sear chicken for 5–6 minutes per side until fully cooked. Rest, then slice.
  3. Cook rice and season lightly with lime juice.
  4. Whisk together Greek yogurt, mayonnaise, chipotle, lime juice, garlic, salt, and pepper for the dressing.
  5. Assemble bowls with rice, chicken, beans, corn, peppers, avocado, tomatoes, and onion.
  6. Top with cilantro and drizzle chipotle-lime dressing over each bowl. Serve with lime wedges.

Notes

Perfect for meal prep. Store dressing separately and add before serving.
