- Season chicken with olive oil and southwest seasoning.
- Grill or pan-sear chicken for 5–6 minutes per side until fully cooked. Rest, then slice.
- Cook rice and season lightly with lime juice.
- Whisk together Greek yogurt, mayonnaise, chipotle, lime juice, garlic, salt, and pepper for the dressing.
- Assemble bowls with rice, chicken, beans, corn, peppers, avocado, tomatoes, and onion.
- Top with cilantro and drizzle chipotle-lime dressing over each bowl. Serve with lime wedges.
