Ingredients
  

Egg Rolls
  • 2 cups cooked chicken shredded
  • 1 cup black beans rinsed and drained
  • 1 cup corn
  • 1/2 cup red bell pepper diced
  • 1/4 cup green onions sliced
  • 1 cup shredded cheese cheddar or Mexican blend
  • 4 oz cream cheese softened
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • 1/2 tsp smoked paprika
  • 12 egg roll wrappers

Equipment

  • Mixing bowl
  • Deep skillet
  • Tongs
  • Paper towels

Method
 

  1. Mix filling ingredients until well combined.
  2. Fill and roll egg roll wrappers, sealing edges with water.
  3. Fry in hot oil until golden brown and crispy.
  4. Drain and serve warm with dipping sauce.

Notes

Can be baked or air-fried for a lighter version.
