  • 2 medium sweet potatoes, peeled and diced
  • 1 red bell pepper, chopped
  • 1 small yellow onion, diced
  • 2 cloves garlic, minced
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper (optional)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 lime, juiced
  • 1/4 cup fresh cilantro, chopped
  • 1 avocado, sliced (for garnish)
  • 1/2 cup shredded cheese (optional)

Method
 

  1. Heat olive oil in a large skillet over medium heat. Add diced sweet potatoes and cook for 8–10 minutes until tender.
  2. Add ground beef and cook until browned. Drain excess fat.
  3. Add onion, bell pepper, and garlic; cook until softened.
  4. Stir in chili powder, cumin, paprika, cayenne, salt, and pepper. Mix well.
  5. Add black beans and corn, stirring to combine. Cook 3–5 minutes longer.
  6. Stir in lime juice and cilantro. Garnish with avocado and cheese before serving.
