  • 12 oz spaghetti
  • 6 slices bacon chopped
  • 2 eggs large
  • 1 egg yolk
  • 1 cup Parmesan cheese freshly grated
  • 2 cloves garlic minced
  • 0.5 tsp black pepper

Method
 

  1. Cook spaghetti until al dente, reserving pasta water.
  2. Cook bacon until crispy and sauté garlic briefly.
  3. Whisk eggs, yolk, Parmesan, and pepper.
  4. Combine hot pasta with bacon, remove from heat.
  5. Add egg mixture and toss with pasta water until creamy.

Notes

Remove pan from heat before adding egg mixture to prevent scrambling.
