  • 2 tbsp olive oil
  • 1 lb boneless skinless chicken breasts diced
  • 1 tsp chili powder
  • 1 tsp smoked paprika
  • 0.5 tsp cumin
  • 0.5 tsp garlic powder
  • 0.25 tsp cayenne pepper optional, to taste
  • salt and pepper to taste
  • 1 cup cooked rice white or brown
  • 0.5 cup black beans rinsed and drained
  • 0.5 cup corn kernels
  • 1 cup shredded cheddar cheese or Monterey Jack
  • 0.5 cup salsa or pico de gallo
  • 2 tbsp sour cream optional
  • 1 lime juiced
  • 4 large flour tortillas
  • fresh cilantro for garnish

Method
 

  1. Heat oil in skillet; cook chicken with seasonings until browned and cooked through.
  2. Warm rice, black beans, and corn; season lightly with salt.
  3. Lay tortillas flat; add rice, chicken, cheese, salsa, and sour cream.
  4. Fold in sides and roll burritos tightly.
  5. Toast burritos in a hot skillet until golden. Serve warm with extra salsa and lime.

Notes

Freeze for up to 3 months. Reheat in oven or microwave before serving.
