Ingredients
  

  • 1 lb ground beef (80/20)
  • 4 slices pepper jack cheese
  • 2 fresh jalapeños, thinly sliced
  • 4 brioche buns, toasted
  • 1 medium tomato, sliced
  • 1 small red onion, thinly sliced
  • 1 cup fresh arugula
  • 1/4 cup chipotle mayo
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • Salt and black pepper, to taste

Equipment

  • Mixing bowls
  • Cast-iron skillet or grill
  • Spatula
  • Knife and cutting board

Method
 

  1. Mix beef with garlic powder, smoked paprika, salt, and pepper. Shape into 4 patties.
  2. Preheat grill or skillet to medium-high heat, lightly oil surface.
  3. Cook patties 3–4 minutes per side. Add cheese, cover, and melt for 1–2 minutes.
  4. Toast brioche buns until golden.
  5. Spread chipotle mayo on buns. Layer patty, jalapeños, tomato, onion, and arugula. Top with bun.
  6. Serve hot with fries or salad.

Notes

For a milder burger, remove jalapeño seeds before slicing.
