Ingredients
  

Spinach Balls
  • 20 oz frozen chopped spinach thawed and drained
  • 1 cup seasoned breadcrumbs
  • 1 cup Parmesan cheese grated
  • 2 large eggs
  • 0.5 cup unsalted butter melted
  • 1 small onion finely diced
  • 2 cloves garlic minced

Equipment

  • Large mixing bowl
  • Baking sheet

Method
 

  1. Preheat oven to 350°F (175°C) and line baking sheet.
  2. Combine all ingredients in a large bowl until mixed.
  3. Roll mixture into balls and place on baking sheet.
  4. Bake until golden brown and set.

Excellent make-ahead appetizer that freezes beautifully.
