Ingredients
  

Soup Base
  • 2 tbsp olive oil
  • 1 medium onion chopped
  • 2 medium carrots diced
  • 2 stalks celery diced
  • 3 cloves garlic minced
  • 1 cup dried lentils green or brown
  • 5 cups vegetable broth
  • 1 can butter beans drained and rinsed
  • 1 tbsp tomato paste
  • 1 tsp ground cumin
  • 0.5 tsp dried thyme
  • 1 piece bay leaf
  • 3 cups fresh spinach chopped
  • 1 tbsp lemon juice

Method
 

  1. Sauté onion, carrots, and celery in olive oil until softened.
  2. Add garlic, tomato paste, and spices; cook briefly.
  3. Add lentils, broth, and bay leaf; simmer until tender.
  4. Stir in butter beans and spinach; season and serve.

Notes

Finish with lemon juice and olive oil for best flavor.
