Ingredients
  

  • 3 Persian or English cucumbers
  • 2 cloves garlic minced
  • 2 tbsp rice vinegar
  • 1 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1-2 tsp gochugaru Korean chili flakes
  • 1 tsp granulated sugar
  • 2 green onions sliced
  • 1 tsp toasted sesame seeds

Method
 

  1. Slice cucumbers in spiral pattern using chopstick method.
  2. Lightly salt and rest 10 minutes, then pat dry.
  3. Whisk together dressing ingredients.
  4. Spoon dressing over cucumbers.
  5. Garnish with green onions and sesame seeds.
  6. Rest briefly and serve.
