Ingredients
  

  • 6 medium yellow squash sliced
  • 1 medium onion chopped
  • 2 tbsp butter
  • 2 large eggs
  • 1 cup cheddar cheese shredded
  • 0.5 cup sour cream
  • 0.5 cup mayonnaise
  • 0.5 cup milk
  • 1 sleeve Ritz crackers crushed
  • 2 tbsp butter melted for topping
  • Salt and pepper to taste

Method
 

  1. Preheat oven to 350°F (175°C). Grease a 9x13 baking dish.
  2. In a skillet, melt butter and sauté squash with onions until tender, about 10 minutes. Drain excess liquid.
  3. In a mixing bowl, whisk eggs, then stir in sour cream, mayonnaise, milk, and shredded cheddar cheese.
  4. Fold in cooked squash and onions. Season with salt and pepper.
  5. Pour mixture into the prepared baking dish.
  6. Combine crushed Ritz crackers with melted butter and sprinkle on top.
  7. Bake uncovered for 25–30 minutes until topping is golden brown and casserole is bubbly.

Notes

Make ahead by assembling the casserole up to a day early. Cover and refrigerate until ready to bake. For a lighter version, replace mayonnaise with Greek yogurt.
