Ingredients
  

Cheesecake Filling
  • 8 oz cream cheese softened
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 1.5 cups whipped topping
Crunch & Assembly
  • 12 mini taco shells
  • 20 golden sandwich cookies crushed
  • 1 packet strawberry gelatin powder
  • 4 tbsp butter melted
  • 1.5 cups fresh strawberries diced

Method
 

  1. Beat cream cheese, powdered sugar, and vanilla until smooth; fold in whipped topping.
  2. Mix crushed cookies, strawberry gelatin powder, and melted butter.
  3. Coat taco shells in strawberry crunch mixture and chill briefly.
  4. Pipe cheesecake filling into shells and top with strawberries.

Notes

Add strawberries just before serving for best texture.
