Ingredients
  

Cookies
  • 1 cup unsalted butter softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 3 tbsp strawberry gelatin powder
  • 2 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 cup white chocolate chips
Strawberry Crunch Coating
  • 20 cookies golden sandwich cookies crushed
  • 1/2 cup freeze-dried strawberries crushed
  • 3 tbsp butter melted

Equipment

Method
 

  1. Cream butter and sugar, then add eggs, vanilla, and strawberry gelatin.
  2. Mix in dry ingredients and fold in white chocolate chips.
  3. Roll dough balls in strawberry crunch coating.
  4. Bake until edges are set and centers are soft.

Notes

Do not overbake for the best chewy texture.
