Ingredients
  

Pasta
  • 12 oz pasta penne or fettuccine
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 10 oz mushrooms, sliced
  • 3/4 cup sun-dried tomatoes sliced
  • 4 cloves garlic, minced
  • 1 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1.5 cups heavy cream
  • 1 cup grated Parmesan
  • 1/2 cup pasta water reserved
  • 1/2 cup fresh basil, chopped

Equipment

  • Large skillet
  • Pasta pot
  • Wooden spoon

Method
 

  1. Cook pasta; reserve pasta water.
  2. Sauté mushrooms in butter and olive oil.
  3. Add garlic and sun-dried tomatoes.
  4. Stir in cream and seasoning; simmer.
  5. Melt Parmesan into the sauce.
  6. Combine with pasta and adjust with pasta water.
  7. Finish with basil and serve warm.

Notes

Use sun-dried tomato oil for added flavor.
