Ingredients
  

  • 4 slices bread
  • 3 tbsp basil pesto
  • 0.25 cup sun-dried tomatoes chopped
  • 1 cup mozzarella cheese shredded
  • 0.5 cup provolone cheese shredded
  • 2 tbsp unsalted butter or olive oil for grilling

Equipment

Method
 

  1. Spread pesto evenly on one side of each bread slice.
  2. Layer sun-dried tomatoes and cheeses on half of the slices, then top with remaining bread.
  3. Heat butter or oil in a skillet over medium-low heat.
  4. Cook sandwiches until golden brown on both sides and cheese is melted.
  5. Slice and serve warm.

Notes

Cook low and slow for the best melt and crisp texture.
