  • 1 cup mashed sweet potato about 1 large sweet potato
  • 2 large eggs
  • 0.5 cup brown sugar packed
  • 0.25 cup melted coconut oil or butter
  • 1 tsp vanilla extract
  • 0.5 cup milk dairy or non-dairy
Dry Ingredients
  • 1.5 cups all-purpose flour
  • 0.33 cup unsweetened cocoa powder
  • 1 tsp baking powder
  • 0.5 tsp baking soda
  • 0.5 tsp salt
  • 0.25 tsp cinnamon optional
  • 0.5 cup chocolate chips plus extra for topping

Method
 

  1. Preheat oven to 350°F (175°C) and prepare a 9x5-inch loaf pan.
  2. Whisk together sweet potato, eggs, brown sugar, oil, milk, and vanilla.
  3. In another bowl, combine flour, cocoa, baking powder, baking soda, salt, and cinnamon.
  4. Add dry ingredients to wet and stir until just combined.
  5. Fold in chocolate chips, pour into pan, and top with extra chips.
  6. Bake 45–50 minutes until a toothpick inserted comes out mostly clean.
  7. Cool 10 minutes, then remove from pan and let cool fully before slicing.
