Ingredients
  

Crust
  • 2 cups all-purpose flour
  • 0.5 cup granulated sugar
  • 0.25 tsp salt
  • 0.75 cup unsalted butter melted
Filling
  • 2 cups mashed sweet potatoes cooked
  • 0.75 cup brown sugar
  • 0.5 cup granulated sugar
  • 2 eggs large
  • 0.5 cup evaporated milk
  • 1 tsp vanilla extract
  • 1.5 tsp cinnamon
  • 0.5 tsp nutmeg
  • 0.25 tsp ginger
  • 0.25 tsp salt

Equipment

  • Mixing bowls
  • 9x13 baking pan

Method
 

  1. Preheat oven to 350°F (175°C) and line a baking pan with parchment paper.
  2. Mix crust ingredients and press into pan. Bake until lightly golden.
  3. Whisk sweet potato filling ingredients until smooth.
  4. Pour filling over crust and spread evenly.
  5. Bake until center is set. Cool completely before slicing.

Notes

Chilling before slicing creates cleaner bars.
