Ingredients
  

Pumpkin Muffin Batter
  • 1.75 cups all-purpose flour
  • 1 cup sugar
  • 1 teaspoon baking soda
  • 0.5 teaspoon baking powder
  • 0.5 teaspoon salt
  • 2 teaspoons cinnamon
  • 0.5 teaspoon nutmeg
  • 0.5 teaspoon ginger
  • 15 oz pumpkin purée 1 can
  • 2 eggs
  • 0.5 cup vegetable oil
  • 2 teaspoons vanilla extract
Cream Cheese Swirl
  • 8 oz cream cheese, softened
  • 0.25 cup sugar
  • 1 teaspoon vanilla extract
  • 1 egg yolk

Equipment

Method
 

  1. Preheat oven to 350°F and line a muffin tin.
  2. Whisk dry ingredients for muffin batter.
  3. Whisk wet ingredients and combine with dry.
  4. Beat cream cheese swirl ingredients until smooth.
  5. Fill muffin liners and top with cream cheese.
  6. Swirl with a toothpick.
  7. Bake 18–22 minutes.
  8. Cool and serve.

Notes

Use full-fat cream cheese for best texture. Swirl lightly for clean patterns.
