Method
- Heat a skillet over medium heat. Add ground beef and cook until browned, breaking it apart with a spatula. Drain excess fat.
- Sprinkle chili powder, cumin, garlic powder, onion powder, smoked paprika, salt, and pepper over the beef. Stir well to combine and cook for 2-3 more minutes.
- In a small saucepan over low heat, combine cheddar, cream cheese, and milk. Stir until smooth and creamy. Remove from heat.
- Wrap tortillas in a damp paper towel and microwave for 20 seconds, or heat in a skillet until pliable.
- Lay a tortilla flat. Spread sour cream, then add rice (if using), seasoned beef, cheese sauce, and shredded cheddar.
- Fold the sides over the filling, roll tightly. Heat a skillet over medium-low heat and lightly toast Quesarito 1-2 minutes per side.
- Slice in half if desired and serve immediately with extra cheese sauce or salsa.
Notes
Optional: add jalapeƱos for spice. Can be stored in fridge and reheated in skillet or air fryer.
