Taco Bell Cheesy Quesarito

A delicious homemade version of Taco Bell's Cheesy Quesarito, packed with seasoned beef, creamy cheese sauce, and perfectly melted cheese, wrapped in a warm tortilla.

Ingredients
  

Beef Filling
  • 250 g ground beef
  • 1 tsp chili powder
  • 1 tsp cumin
  • 0.5 tsp garlic powder
  • 0.5 tsp onion powder
  • 0.25 tsp smoked paprika
  • to taste salt and pepper
Cheese Sauce
  • 100 g shredded cheddar cheese
  • 2 tbsp cream cheese
  • 2 tbsp milk
Assembly
  • 2 large flour tortillas
  • 0.25 cup cooked white rice optional
  • 0.25 cup sour cream
  • 0.25 cup shredded cheddar for topping inside tortilla

Equipment

  • Skillet or non-stick pan
  • Mixing bowl

  • Tortilla warmer or microwave

Method
 

  1. Heat a skillet over medium heat. Add ground beef and cook until browned, breaking it apart with a spatula. Drain excess fat.
  2. Sprinkle chili powder, cumin, garlic powder, onion powder, smoked paprika, salt, and pepper over the beef. Stir well to combine and cook for 2-3 more minutes.
  3. In a small saucepan over low heat, combine cheddar, cream cheese, and milk. Stir until smooth and creamy. Remove from heat.
  4. Wrap tortillas in a damp paper towel and microwave for 20 seconds, or heat in a skillet until pliable.
  5. Lay a tortilla flat. Spread sour cream, then add rice (if using), seasoned beef, cheese sauce, and shredded cheddar.
  6. Fold the sides over the filling, roll tightly. Heat a skillet over medium-low heat and lightly toast Quesarito 1-2 minutes per side.
  7. Slice in half if desired and serve immediately with extra cheese sauce or salsa.

Notes

Optional: add jalapeƱos for spice. Can be stored in fridge and reheated in skillet or air fryer.
