Tasty Hawaiian Huli Huli Chicken

Ingredients
  

Huli Huli Chicken
  • 3 pounds chicken thighs
  • 1 cup pineapple juice
  • 0.5 cup soy sauce
  • 0.5 cup brown sugar
  • 0.25 cup ketchup
  • 0.25 cup rice vinegar
  • 1 tablespoon fresh ginger, grated
  • 4 cloves garlic, minced
  • 2 tablespoons vegetable or sesame oil
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon chili flakes (optional)
  • 0.25 teaspoon black pepper
  • fresh pineapple slices for serving
  • green onions for garnish

Method
 

  1. Whisk together pineapple juice, soy sauce, brown sugar, ketchup, vinegar, ginger, garlic, oil, Worcestershire sauce, chili flakes, and pepper.
  2. Place chicken in a dish and pour marinade over it, reserving 1/2 cup for basting. Marinate at least 2 hours or overnight.
  3. Preheat grill or oven to medium-high or 400°F (205°C).
  4. Grill chicken 6–7 minutes per side, basting frequently with reserved marinade.
  5. Continue cooking until chicken reaches 165°F and edges are caramelized.
  6. Grill pineapple slices until lightly charred.
  7. Serve chicken with pineapple and garnish with green onions.

Notes

For best flavor, marinate chicken overnight. Grilled pineapple enhances sweetness and balances the savory marinade.
