Ingredients
  

Float Base
  • 4 scoops premium peppermint ice cream
  • 2 cups lemon-lime soda or ginger ale chilled
  • 0.5 tsp vanilla extract
Garnish
  • 4 candy canes crushed
  • 2 sprigs fresh mint optional
  • 1/4 cup whipped cream optional
  • 2 whole candy canes for stirring

Equipment

  • Tall glasses
  • Ice cream scoop
  • Rolling pin or mallet
  • Plastic bag for crushing

Method
 

  1. Chill 2 tall glasses in the refrigerator for at least 30 minutes before serving.
  2. Remove peppermint ice cream from freezer and let soften slightly for easier scooping, about 5-10 minutes.
  3. Crush candy canes in a sealed plastic bag using a rolling pin until you have a mix of fine powder and small chunks.
  4. Add vanilla extract to the chilled soda and stir gently to combine.
  5. Place 2 scoops of peppermint ice cream in each chilled glass.
  6. Slowly pour the vanilla-enhanced soda over the ice cream, filling each glass about 3/4 full.
  7. Top with a generous sprinkle of crushed candy canes and whipped cream if desired.
  8. Garnish with fresh mint sprigs and serve immediately with whole candy canes as stirrers.

Notes

For adult versions, add a splash of peppermint schnapps. Can substitute with vanilla ice cream and peppermint extract if peppermint ice cream unavailable. Best served immediately after assembly.
