Method
- Chill 2 tall glasses in the refrigerator for at least 30 minutes before serving.
- Remove peppermint ice cream from freezer and let soften slightly for easier scooping, about 5-10 minutes.
- Crush candy canes in a sealed plastic bag using a rolling pin until you have a mix of fine powder and small chunks.
- Add vanilla extract to the chilled soda and stir gently to combine.
- Place 2 scoops of peppermint ice cream in each chilled glass.
- Slowly pour the vanilla-enhanced soda over the ice cream, filling each glass about 3/4 full.
- Top with a generous sprinkle of crushed candy canes and whipped cream if desired.
- Garnish with fresh mint sprigs and serve immediately with whole candy canes as stirrers.
Notes
For adult versions, add a splash of peppermint schnapps. Can substitute with vanilla ice cream and peppermint extract if peppermint ice cream unavailable. Best served immediately after assembly.
