  • 1 pound breakfast sausage cooked and crumbled
  • 8 large eggs
  • 1 cup milk
  • 2 cups shredded cheddar cheese divided
  • 1 bag frozen tater tots 32 ounces
  • salt and pepper to taste
  • 1/2 teaspoon garlic powder optional
  • 1/4 teaspoon onion powder optional
  • green onions or parsley for garnish

Method
 

  1. Preheat oven to 350°F (175°C) and grease a 9x13-inch baking dish.
  2. Cook and crumble sausage, then spread evenly in baking dish.
  3. Whisk eggs, milk, salt, pepper, garlic powder, and onion powder.
  4. Sprinkle 1½ cups cheese over sausage, pour egg mixture on top.
  5. Arrange tater tots in a single layer on top.
  6. Bake 40–45 minutes until eggs set and tater tots are golden.
  7. Top with remaining cheese and bake 5 minutes to melt. Garnish and serve.

Make-ahead friendly. Customize with bacon, ham, or veggies.
