- Heat oil in a large pot over medium heat. Sauté onion until soft.
- Add garlic and ginger, cooking until fragrant.
- Stir in red curry paste and spices, cooking briefly.
- Add lentils and vegetable broth. Bring to a boil.
- Reduce heat and simmer until lentils are tender.
- Stir in coconut milk and season with salt and pepper.
- Finish with lime juice and serve warm with garnishes.
Notes
Adjust spice level by adding more or less curry paste. Blend for smoother texture if desired.
