Ingredients
  

Soup Base
  • 1 cup red lentils rinsed
  • 1 can coconut milk full-fat
  • 1 onion chopped
  • 3 cloves garlic minced
  • 1 tbsp fresh ginger grated
  • 2 tbsp Thai red curry paste
  • 4 cups vegetable broth
  • 1 tbsp olive oil
  • 1 tbsp lime juice fresh

Method
 

  1. Heat oil in a large pot over medium heat. Sauté onion until soft.
  2. Add garlic and ginger, cooking until fragrant.
  3. Stir in red curry paste and spices, cooking briefly.
  4. Add lentils and vegetable broth. Bring to a boil.
  5. Reduce heat and simmer until lentils are tender.
  6. Stir in coconut milk and season with salt and pepper.
  7. Finish with lime juice and serve warm with garnishes.

Notes

Adjust spice level by adding more or less curry paste. Blend for smoother texture if desired.
