Thai Peanut Chicken

Tender chicken simmered in a rich, creamy Thai-inspired peanut sauce with lime, soy, and ginger. Perfect over rice or noodles.

Ingredients
  

Chicken
  • 1 1/2 pounds boneless chicken breasts cut into bite-sized pieces
  • 1 tablespoon vegetable oil
  • salt and pepper to taste
Peanut Sauce
  • 1/2 cup creamy peanut butter
  • 1/4 cup soy sauce
  • 2 tablespoons honey or brown sugar
  • 1 tablespoon rice vinegar
  • 1 tablespoon lime juice fresh
  • 1 teaspoon sesame oil
  • 1 tablespoon fresh ginger grated
  • 3 cloves garlic minced
  • 1/2 teaspoon crushed red pepper flakes optional
  • 1/2 cup coconut milk or water to adjust sauce thickness
Garnish
  • 1/4 cup chopped roasted peanuts
  • 2 green onions sliced
  • fresh cilantro leaves
  • lime wedges for serving

Equipment

  • Large skillet or wok

Method
 

  1. Whisk together all peanut sauce ingredients in a bowl until smooth.
  2. Heat oil in skillet, season and cook chicken until browned and cooked through.
  3. Pour sauce over chicken and stir to coat evenly.
  4. Simmer for 2–3 minutes until sauce thickens slightly.
  5. Serve over rice or noodles with garnishes of peanuts, cilantro, and lime wedges.

Notes

For a spicier version, add Thai chili paste or sriracha. The sauce can be prepped up to 3 days ahead.
