  • 4 cups green peas fresh or frozen
  • 4 oz pancetta diced
  • 1 pear diced, Bosc or Bartlett
  • 1 small shallot minced
  • 1 tablespoon unsalted butter
  • 1 teaspoon olive oil
  • 1 teaspoon fresh thyme leaves
  • salt and pepper to taste
  • lemon juice or honey optional, for finishing

Method
 

  1. Cook pancetta in a skillet over medium heat until crisp, about 5–6 minutes. Remove and set aside.
  2. Add butter and olive oil to the same pan, sauté shallot until fragrant.
  3. Add diced pear and cook until slightly caramelized, about 3–4 minutes.
  4. Add peas and thyme, cooking until bright and heated through, 2–3 minutes.
  5. Return pancetta to skillet, season with salt and pepper, and toss to combine.
  6. Finish with lemon juice or honey, garnish with thyme, and serve warm.

Notes

Quick and elegant side dish. Great with turkey, ham, or roasted chicken. Ready in under 25 minutes.
