Ingredients
  

Pea Side Dish Ingredients
  • 4 cups peas frozen
  • 4 oz pancetta diced
  • 1 pear diced
  • 1 onion finely diced
  • 2 cloves garlic minced
  • 2 tbsp butter
  • 1 tsp thyme fresh or 1/2 tsp dried
  • salt and pepper to taste
  • lemon zest optional

Equipment

  • Mixing bowls
  • Baking sheet

  • Hand mixer or stand mixer

Method
 

  1. Cook pancetta in a skillet until crispy, then set aside.
  2. Sauté onion in butter, then add diced pear and cook until caramelized.
  3. Add garlic and thyme and cook until fragrant.
  4. Add peas and heat through.
  5. Return pancetta to the pan and season with salt and pepper.
  6. Finish with optional lemon zest and serve warm.
