Ingredients
  

Maple Bacon Carrots
  • 2 lbs carrots, peeled and sliced
  • 6 slices thick-cut bacon, chopped
  • 3 tbsp butter, melted
  • 1/3 cup pure maple syrup
  • 1 tsp garlic powder
  • 1/2 tsp smoked paprika
  • salt and black pepper to taste
  • fresh parsley for garnish

Method
 

  1. Preheat oven to 400°F (205°C). Line a baking sheet with parchment paper.
  2. Spread chopped bacon on the sheet and bake 8–10 minutes until partially rendered.
  3. Add sliced carrots to the sheet and toss in bacon fat.
  4. Mix butter, maple syrup, garlic powder, smoked paprika, salt, and pepper.
  5. Pour maple mixture over carrots and toss to coat.
  6. Add bacon back to the pan and roast 25–35 minutes, stirring halfway.
  7. Broil 2–3 minutes for extra caramelization if desired.
  8. Garnish with parsley and serve warm.

Notes
