Dry Ingredients
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 0.5 tsp baking powder
  • 0.5 tsp salt
  • 1.5 tsp cinnamon
  • 0.25 tsp nutmeg
Wet Ingredients
  • 2 eggs large
  • 0.75 cup granulated sugar
  • 0.5 cup brown sugar packed
  • 0.75 cup vegetable oil
  • 2 tsp vanilla extract
  • 2 cups grated zucchini lightly squeezed

Method
 

  1. Preheat oven to 350°F (175°C) and prepare a 9x5-inch loaf pan.
  2. Whisk together dry ingredients in a bowl.
  3. Whisk wet ingredients until smooth.
  4. Fold zucchini into wet mixture.
  5. Combine wet and dry ingredients gently.
  6. Pour batter into loaf pan and bake 50–60 minutes.
  7. Cool before slicing and serving.

Notes

For extra moisture, avoid over-squeezing the zucchini. Bread tastes even better the next day.
